Description

1st Release

One of only 1000 bottles the Bimber Inaugural release was handcrafted and aged in Ex Pedro Ximenez Sherry Casks.

5 casks were used to make the Polish creators first malt - number 6,19,31,37 and 38.

After immigrating from Poland, the founder Dariusz Plazewski pursued his passion for distilling. We must say, we are very glad he did!

Huge congrats to all that were involved in this special release. Only 800 bottles were released to the UK market and the other 200 were available internationally.

Tudor House - Special Release 

A single cask release that was matured in a Pedro Ximenez cask #25 has been selected in 2020  for the 25th anniversary of Tudor House. This is one of 76 bottles.

Oloroso Sherry Butt #544-7/67 - Selfridges Exclusive & Wine

An exclusive partnership between the London distillery and department store Selfridges. This Bimber was made from single farm barley (which was malted at Westminster Maltings) and matured in four 1st fill American Oak Ex-bourbon casks. It was then finished in a 2010 single Oloroso sherry butt from hugely renowned Spanish sherry producer González Byass. Bottled in June 2020 at 51.5% ABV.

Only 937 bottles were produced from Cask #544-7/67. Each tube which cases the bottles has artwork from the Dutch artist and sculptor Eelke van Willegen.

Gonzalez Byass Oloroso 2010 sherry: 750ml, 18%. The renowned Gonzalez Byass one of the most celebrated Bodegas across Spain. This Oloroso 2010 is stunning and very popular.  It is said to be short and dry, with notes of almond, plum and figs. Pair with game, cheese and nuts to bring out its natural, fruity undertones.

Ex-bourbon - Small Batch #1

One of only 1948 bottles in the Bimber Ex-bourbon Batch 1 Small Batch release. It was firstly matured in 1st fill bourbon barrels. 

The batch number for this bottling is 01/2020 which was bottled in May 2020. 

Re-Charred Oak Cask - Small Batch #1

This Bimber Re-charred oak bottling is from Batch 1 of Bimber small-batch releases. Matured in re-charred, American Oak Casks, this is one of just 5000 bottles produced at 51.9%.

Sherry Cask #42

This single cask release was fully matured in an Ex-Pedro Ximenez sherry cask #42. Sourced from Spain, this cask was previously utilised in a Jerez Solera for several decades, imparting a delectable selection of bright and rich fruit-forward notes. This is one of only 329 bottles produced. 

Virgin Cask #7

Released in June 2020, this single cask Bimber, matured in American virgin oak cask #7 was bottled at the natural cask strength of 57.8%. This is one of just 249 bottles produced. 

Ex-Bourbon Cask #8

Released in June 2020, this single cask Bimber, matured in ex-bourbon cask #8 was bottled at the natural cask strength of 58.3%. This is one of just 267 bottles produced.
